Last month, I found Dolly Parton’s Southern-Style Coconut Cake Mix and made it for the Eagle staff to try. It was delicious!
I looked everywhere for the Banana Cake but couldn’t find it…until last week. When I spotted it at the Kroger Marketplace on Holland Road in Virginia Beach, I snagged it.
This cake calls for a few extra ingredients and steps than the typical boxed cake mix. I picked up Instant Pudding, Nilla wafers, and a single banana to turn it into a Banana Pudding Cake.
I combined the box mix with 1 cup of milk, 1/2 cup unsalted butter melted, and 3 tablespoons of pudding mix and baked it for 25 minutes at 350 in two 9-inch round pans. While it baked, I assembled the pudding mix and frosting.
For the frosting, I whipped one cup of heaving whipping cream with 1/3 a cup of the Dolly Parton buttercream frosting.
Time to assemble!
I added the pudding mix, topped it with a layer of banana and crushed Nilla wafers.
This is the only place where I veered off the directions a bit. The recipe on the box called for 12 slices of banana but I wanted a bit in every bite so I used a whole banana to cover the middle layer.
Almost ready…
I transported it to the station and topped it with more wafers and banana slices.
A couple of notes:
Since this recipe calls for mixing the frosting with whipping cream, it is MUCH lighter than the coconut cake recipe. That was a good thing for a couple of us, but some folks missed the super sweet sugary frosting of the last cake.
I also want to note that I know have two-thirds a jar of frosting leftover, along with half a box of Nilla wafers so it’s not the most economical of boxed cake mixes.
(is it weird to just dip Nilla wafers into frosting as a dessert the rest of the week?)
